Meat Balls in Curry w/Vanilla "Rice"

What an amazingly good meal this was!!!

Meat Balls: (These were nummy all on their own and I'll certainly make these again for other things)

  • 2 lbs ground beef
  • 1 T Onion Flakes
  • 2 t salt
  • 1 can coconut milk
  • 1 cup almond flour
  • 2 eggs
Instructions
  1. Bring 5 cups of water and 2 t salt to boil
  2. Combine all the ingredients for the meatballs into a bowl and mix well
  3. Shape the meat into meatballs and let them boil in the water for app 5 minutes or until they move to the surface of the water
  4. Remove the meatballs from the water
Curry Sauce: (This was also nummy all on it's own and I'll be making this to go on many other meats)
  • 1 diced onion
  • 1 T Cocnut Oil
  • 4 t curry
  • 1 T fresh ginger
  • 1 Can Coconut Milk
  • 2 tsp chicken bullion
Instructions
  1. In a pot fry the onions together with the curry and coconut oil
  2. Add the coconut milk, chicken bullion, and the ginger
  3. Simmer until it reaches the consistency you like
Vanilla "Rice"


  • 1 10oz bag frozen cauliflower
  • 1 cup water
  • 1 t vanilla
  • 1 star anise
  • 1 pinch saffron

Instructions

  1. Cook cauliflower until just softened (this doesn't take long!)
  2. Process the cauliflower in a food processor until it is the size of rice or couscous (or chop it with a knife like I do because I don't own a food processor)
  3. Saute the cauliflower in a pan with oil until heated 
  4. Add water, vanilla, star anise and a pinch saffron - let boil until water has completely evaporated

Thoughts on Cod

I made Cod on Monday and today I had the last of the three meals that came of that. Although it was 'good' I've decided that white fish needs butter. I kept thinking there was something missing and frankly the mustard and almonds that I baked with the fish just didn't do enough. Today while I was eating it hit me. The thing needs FAT. So, next time I make white fish (probably cod because I'm cheap) I'm going to coat it with the garlic butter 'dip' that I've made before to serve with artichokes.

Hmmm - just thinking about this make me hungry for more fish!

Taco Salad - Finally

I've been futzing around trying to figure out how to make a good taco seasoning without buying a 'mix' for ages. I constantly end up making it too hot, or with not enough flavor or just... wrong. Today, I finally got it right.

After browning 1 lb of beef I added

1 Tbs of Mexican chili powder
1 tsp garlic powder
1 tsp cumin
1 tsp dried oregano
.5 tsp Hungarian paprika
.5 tsp cayenne
Dash of Chipolte spice
Salt - don't know how much - I just give the grinder a twist 3-4 times

Then I poured 1 oz of White Tequila over the top of it all, mixed it while the alcohol was cooking down, and then added .5 a cup a water and let it cook for a bit.

When the water was cooked almost all away, I added a bit of arrow root to make it whole thing thicken up a bit, stirred and served.

Of course this could be served as 'normal' tacos but since I'm not eating grains right now I made a salad.

For my husband who's more adventurous then me I took a spinach leaves and some peppers and mixed two Tbs of salsa, and 1 tsp of jalapeƱo chutney in. I dropped some taco meat and cheese on top and he was a happy camper.

For me, I simply added taco meat and feta cheese to my spinach leaves and dinner was served.

Who am I?

Well, I'm someone who loves to cook, but has no real knowledge or education in the matter.

I collect cookbooks, but rarely follow one.

I experiment with food, flavors and ingredients, and sometimes I get it right, and other times I get it really really wrong.

And, this blog is simply my way of chronicling my journey and hopefully document those experiments that work so that I can recreate them on another day.

What influences my cooking? Well a lot of things do; what diet I'm on, what seems interesting at the store, what I'm watching on TV and/or what's in m fridge.

Hopefully I'll entertain you with some of my stories... if nothing else I'll entertain myself.
