I made Cod on Monday and today I had the last of the three meals that came of that. Although it was 'good' I've decided that white fish needs butter. I kept thinking there was something missing and frankly the mustard and almonds that I baked with the fish just didn't do enough. Today while I was eating it hit me. The thing needs FAT. So, next time I make white fish (probably cod because I'm cheap) I'm going to coat it with the garlic butter 'dip' that I've made before to serve with artichokes.
Hmmm - just thinking about this make me hungry for more fish!
